For real Viennese coffee enjoyment, it is of course also a good idea to use a suitable coffee blend as beans or ground.
Recipe for 4 people:
4 lightly heaped measuring spoons of finely ground coffee, approx. 35 g.
4 glasses of sparkling mineral water
Fresh cream
Sugar white
Preparation time: approx. 15 minutes
And this is how it is done:
First you bring fresh cold water to the boil. A preheated jug is provided. These are preheated by swiveling them out with hot water. The coffee filter is now filled with the coffee powder and put on.
Boiling water should never be used to prepare coffee, so wait 30 seconds after boiling before pouring the hot water over the powder in sips. Professionals initially cover the coffee powder with hot water and then wait 1 minute so that the coffee can develop its aroma. Gradually pour water over the powder until the pot is full.
Now stir the coffee briefly in the pot and serve it immediately in cups. It is served with a glass of water, sugar and cream.
Preparation variants:
This type of preparation described above becomes “Einspänner” when the coffee is served in a glass with a handle and a top of whipped cream. He is called “Fiaker” when a shot of kirsch or rum is added to the coffee. This is garnished with a whipped cream topping and a cherry on top.
Recipe for 4 people:
6 lightly heaped measuring spoons of finely ground coffee, approx. 40 g
0.5 l fresh whole milk
Preparation time: approx. 20 minutes
Energy value: 80 kcal per cup

A very strong coffee is brewed from 0.5 l of fresh tap water.
Boiling water should never be used to prepare coffee, so wait 30 seconds after boiling before pouring the hot water over the powder in sips. Professionals initially cover the coffee powder with hot water and then wait 1 minute so that the coffee can develop its aroma. Gradually pour water over the powder until the jug is full.
Now heat the milk carefully, but don’t let it boil. Then you beat the hot milk with a milk frother. The brewed coffee is divided into 4 cups, the milk and the foam are evenly distributed over the 4 cups and served with a glass of water and sugar.

And this is how it is done:
A very strong coffee is brewed from 0.25 l of fresh tap water.
Boiling water should never be used to prepare coffee, so wait 30 seconds after boiling before pouring the hot water over the powder in sips. Professionals initially cover the coffee powder with hot water and then wait 1 minute so that the coffee can develop its aroma. Gradually pour water over the powder until the jug is full.
Now distribute the coffee evenly over 4 cups and add sugar, cream or milk and a glass of water.
Recipe for 4 people:
4 lightly heaped tablespoons of vigorously roasted coffee, ground (30 g)
4 sugar cubes
4 tbsp cognac or brandy
Preparation time: approx. 20 minutes
And this is how it is done:
First brew the coffee and divide it into 4 cups.
To do this, put a lump of sugar on a coffee spoon, soak it with brandy and light it. Always hold the spoon over the cup.
As soon as the flame goes out by itself, stir the sugar into the coffee.
Recipe for 4 people:
2 unsprayed oranges
125 g of sugar
100 g cold cream
5 lightly heaped tablespoons of strongly roasted ground coffee (40g)
4 teaspoons of brown rum
4 teaspoons of brown cane sugar
1 teaspoon of finely ground hazelnuts
Preparation time: approx. 30 minutes
And this is how it is done:
Making a syrup from oranges and sugar:
Wash oranges, dry them, peel off the peels and squeeze them out. Now bring the peeled peel to the boil in a saucepan with 200 g sugar and 150 ml water and cook uncovered over low heat for about 10 minutes. Now add the squeezed orange juice. Take everything off the stove and let cool down.
Pour everything through a sieve.
Now pour 1 teaspoon of syrup into each of the mocha cups. Whip the cream and chill.
A strong mocha is made from 1/4 l of fresh tap water and coffee powder. This is poured onto the syrup in the cups and mixed with 1 teaspoon rum and sugar.
Garnish with cream and nuts.
Recipe for 4 people:
3 capsules of cardamom
4 teaspoons of brown cane sugar
1/2 teaspoon cinnamon powder
100 g cold cream
4 lightly heaped tablespoons of strongly roasted ground coffee (30 g)
4 tsp calvados
4 teaspoons of mocha liqueur
2 teaspoons of chocolate sprinkles or grated chocolate
4 tbsp cognac or brandy
Preparation time: approx. 30 minutes
And this is how it is done:
Grind the kernels of the cardomom pods in a mortar and mix with cinnamon. Then whip the cream until stiff.
Brew a strong coffee from 500 ml of water and the coffee powder and divide it into 4 large cups. Add the remaining sugar, the calvados and liqueur and a pinch of spice mixture. Spread the cream on top and garnish with the remaining spices and chocolate sprinkles.
Recipe for 4 people:
5 heaped tablespoons of vigorously roasted coffee, ground (50 g)
250 ml of fresh whole milk
Preparation time: approx. 20 minutes
And this is how it is done:
First, the coffee powder is heated with 750 ml of cold water until it boils. Then remove from the stove and let cool down for 5 minutes. In the meantime, heat the milk
Now the coffee is distributed over 4 large coffee mugs by pouring it through a fine sieve. Finally, pour on the hot milk – without the skin – done.
